Stock C5 wagon wheels are reported to have a front 56mm offset(17x8.5) and a rear 65mm offset(18x9.5). How low can the wheel offset be so nothing rubs against any suspension parts?
Looking to go front 54mm(17x9.5) and rear 56mm(18x10.5). Same tire size as stock, stock brakes.
Aftermarket chrome C6 Z-06 wheels in C5 Z-06 sizes. Fitment, Front are the same, rear stick out a hair. the wheels are an inch wider then standard coupe wheels. Can't say what the off set is sorry. The sizes are 17x9.5 & 18x10.5 with stock size tires. nothing rubs.
Using the offset wheel calculator I found here, I know that the rears will be in 4mm more. Which is nothing. However, the fronts will be in about 12mm more which is about a 1/2".

Frank, Nice looking wheels. Quick question, by stock tire sizes do you mean the stock C5 (non Z06) sizes of 245/45ZR17 front and 275/40ZR18 back? Do those work on the wider wheels okay?

Yes they are non Z06 sizes and they do work fine with the wider wheel. 245/45/17-275/40/18.
I went with chrome C6Z06 wheels in stock C5 coupe sizes........17x8.5" with 245/45/17 front & 18x9.5" with 275/40/18 rears.
Stock offsets are 58mm front/65mm rear. I went with 49mm front/50mm rear. This means my new rims protrude outward 9mm (approx 3/8") more on the fronts and 15mm (approx 5/8") more on the rears. These amounts are barely noticeable unless pointed out, but it does give a slightly wider, more "sporty" look.
Here is an offset calculator to help you test different settings. Just punch in your current size/offset in the top boxes, and the new size/offset in the lower boxes for each wheel to see the results.

They are almost the same as the stock C5 Z06 wheels. The fronts are the same and the rears are only 2 mm different (.079")
