Newb here, Looking for Corvette Advice :)

Friend of mine had a 442 vert, decided to take his 3 year old for a nice Sunday drive strapping him in the back seat
my friend realized his son was in the backseat
he turn to look at his boy and tears were pouring from his eyes
he didn't know if it wasthe wind or if he was frighten

Please understand I'm not trying to tell anyone what they should do. If the two door works for her that's great. Just trying to share some practical experience. I don't think the mustang would be unsafe with a car seat. Just a pain in the hindquarters squeezing back there to fool with a child seat and other accoutrements.

It's legal to put a car seat in the front seat of a car which was designed only with front seats only
If you want a sports car (well more like a pony car), I would look at a Challenger, ATS-V, CTS Sport, or a CTS-V. Good to fair back seat room, powerful, good drivers, and more family friendly. A Focus RS or ST is another good car to consider.
However, if you do not have to depend upon a Vette as your daily driver, by all means, go for it! These cars are reliable and great used ones are not that hard to find. Look for the lowest mileage one you can afford that has been well taken care of, less than 60K miles would be ideal.
PS: I feel your pain. Although happily a low mileage Z06 sits in my garage, I have to have a 4 door daily driver due to family needs as well. I would like to make my DD a 2016 Camaro SS, but I cannot do without the back seat.
Best of luck to you.. If you cannot get one now due to family needs, no worry. You will be able to own one one day. Until then, family always comes first. Nothing is more precious than your children, NOTHING, not even a Corvette!

I'd look for a CTS V or a SHO Taurus if you need to replace the DD. The Mopar's don't do it for me. I'm young for a Vette owner, but I figured if I didn't do it now I'd never do it.

off switch in the glove box you can use to turn off
the passenger’s air bag when you want to secure a
rear-facing child restraint at the passenger’s position.

never put a rear-facing child restraint in this vehicle.
