Insurance recommendations for low mileage

I'm having a hard time justifying these specialty plans. I pay $108/mo for my Corvette and my '09 Malibu through Country Insurance (I'm 35). I have a $500 deductible but I don't have any mileage limit. They would give me book value for the car but that's still more than what I paid for it at this point. The only real advantage I can see is that you can set a price for the car.

I can understand that as it makes total sense. IMO not really worth it on a stock car unless you want to get more money in the case that something bad happens.

I am also currently re-assessing our insurance insurance.
My current insurance company wants $510 for 6 months to insure my C5 as part of a 3 car, two owner set of vehicles - the others are a pickup, also low mileage, and our primary vehicle, a sedan. We both have clean licenses; neither of us have any claims, accidents or tickets on our records. The C5 sees about 3k miles a year. We are both retired so no work or business use by either of us.
The specialist companies I have looked at want significantly less than the above 6 month amount for a full year's coverage on the C5, so how is it not worth it?
