Welcome to the forum! Congrats on the Z06. As has already been stated, change the tires NOW! The old tires are not safe regardless of tread remaining. Your tires are the single most important part on your car.
There is no reason at all to change the MAF on a stock car unless it is malfunctioning. As mentioned, you can clean it if needed.
Keeping the radiator and condenser clean will go a long way towrds keeping temps down (although going as high as 230 is still in the normal range for these cars). There are some other things that you can do if you want to try to lower your temps. You can retune your fans to come on at a lower temp. Mine are tuned to come on at 199. This will help. You can also get a Dewitts aftermarket radiator. They are pricy, but WILL lower your temps. I wouldn't use any coolant other than Dex-Cool. Dex-Cool can be easily spotted visually as It is orange instead of green.
Speaking of fluids, you don't know when or if any of the fluids have been changed. I would swap all of them, so that you know for sure. I would recommend DOT-4 brake fluid if you plan on any "spirited" driving.
If you plan on driving at night, I would look into aftermarket headlights. Sharp Light Innovations, and KnightDrive TV both have good options. There are other good options for the rest of the exterior lighting both from Sharp Light or from Vette Lights. Although upgrading to LED bulbs for your non-headlights does make a big improvement. I do NOT recommend just dropping LEDs in the stock headlight housing as the light will scatter very badly.
As others have mentioned, MGW is the go to for aftermarket shifters. Some like a C6 shifter paired with a T-Mod box. In addition to a short throw shifter, you migth also want to consider the anti-venom mod. It is practically free, and really does smooth out the shift feeling.
You may want to consider upgrading your suspension as well. Consider upgrading to C6 Z06 shocks and sway bars. These can be swapped in place of your C5 Z06 parts with no modification or adjustments needed.
As far as exhaust, Borla and Corsa are by far the most popular choices. Other than the stock system, they are the only ones that don't have any drone. If you're not all that bothered by a bit of drone, Billy Boat is also very popular. However, exhaust is extremely subjective, so go with whatever YOU like.
