Highs: Excellent engine and exhaust note; capable and not overly stiff suspension; returns nearly 30 mpg if you keep your foot out of it; there are plenty out there at a wide range of prices.
Lows:Seats aren’t supportive enough for aggressive driving; development spent less time on the interior finishes than on the rest of the car.

JMO, but those values that Hagerty shows are very optimistic. No way I am going to pay nearly $50K for a 2003 Z06 even if it is in immaculate condition - and I really like C5s as I had three of them. The market is beginning to change and pricing will return to normal levels before long.
Check classic.com and ebay with the "sold listings" filter for actual selling prices.
$25k-$30k is realistic. And yes the Concours cars with basically delivery miles do sell for around $50k.
#3 condition is what most cars are, according to Hagerty.
The interior is basic but it's a performance supercar so the interior shouldn't matter, just like it didn't matter on the Ferrari F40 which has an arguably worse interior. That being said, you can spend a few hundred bucks and make the interior look great.

This car still blows me away sometimes it handles so well, and it’s just the stock suspension only upgrade was to c6z shocks.

The pros/cons are pretty accurate though.
But, people who are maybe not as knowledgable as you do! Every market has those who "know" the price is inflated but it marches on incessantly.

That's the beauty of C5 seats... Good design... Straight forward design!... No monkey business design.... The long distance drive comfort is unmatched by any car on planet Earth.. So to speak... If only the "quality of material" was as good and as well executed as the design thought.........🤔sorta... except for that Friggin polymer washer on the seat slide.
