I’ve had my 2000 C5 for a few weeks now and successfully set my seat memory functions within the first couple days of ownership. However, yesterday I got in and the seat memory starting moving into an unknown position. It’s happened a few time since.
Has anyone else experienced this? Any ideas why this is happening?
I had this problem intermittently several years back. I turned off the easy entry function, and it solved the issue. I know it's not the best solution. However, I'm the ONLY one who drives my Vette, so I don't really need to use the memory function.

Had the same problem and did the same solution. Since I am the only person driving the car, my seats are set and now do not move.
Same here with my 2000 vert. What’s maddening is my fob is apparently set to this ghost setting when I unlock the door. I have set all three memory positions, but somehow the seat decides where it wants to go.
One cause of wandering seat is that the contacts in the seat motor that control seat position become gummed up. One way to diagnose is to run the seat back and forth full range a few times. This procedure may temporarily cure the wander. If it does, a more permanent fix is to remove the seat then the motor and disassemble the rear of the motor where the contacts are and clean and dielectric grease them.

Another thing that can cause this is a dirty potentiometer under the seat. Mine did this every once in awhile, and I read a thread on here somewhere about how to clean it. Seat removal must happen. Also need a work bench to rest the seat on. Make sure bench is very clean, as you must flip the seat upside down, and it will then have the leather resting on the bench top. Do a search. Not terribly hard, but a couple of hours, minimum. Hope this helps.....
