Yes, to enter competition mode you will need to hold the button down each time you re-start the car, unless you purchase an aftermarket device. Pushing reset maintains the competition mode and allows you to utilize your other DIC buttons.
Unfortunately this mode doesn't seem to be user definable as a default "Driving Mode" however there are aftermarket alternatives I believe that disable Active Handling / Traction Control as well as a few other features. Unit plugs into the service port I think.
As for the "Comp Mode" message in the DIC being present all the time:
All you have to do to get back to all other visible info is hit reset after you hold the AH button for 5 sec and see the "Comp Mode" message on the DIC.
One thing about "Comp Mode" that I have noticed is that if I get any sideways movement on the 1-2 shift AH kicks in and feels just like the traction control. So for all out straight line acceleration I would disable it all together and then hit the reset button to get other stats.

I turn off both AH & TC when I am at the drags. Doing that turns on the yellow idiot light in the dash so I can be sure that traction control is off at a glance.
Competition mode leaves the T/C idiot light off and the only way to be assured that you are in it is to leave the "Competition Mode" label in the DIC. That is not a good option for me because I like to monitor my oil temp there.
I personally do not need A/H when at the drags. I am smart enough to know that if the car gets really squirrely during the run push in the clutch and give up the run.

Yes AH is still on, but it will "Help" by applying the brakes, therefore slowing you down. All you do in Comp mode is disable Traction control.

at the Drag Strip Comp Mode AH on TC off
They didn't put all these lights bells and whistles in your Z for nothing.

Yeah I know. As I said above the Yellow idiot light is not lit when in Competition Driving. When you clear the Competition Driving label from the DIC to monitor your other functions you have no indication that Traction Control is disabled. I sometimes get nervous when pulling up to the dragstrip line and I do not want to have to worry about if I remembered to turn off T/C.
Back in 1998 I was invited to the "Ride of a Lifetime" traveling Corvette road show that gave participants the opportunity to drive new active handling equipped Corvettes on an autocross course. I ran into Dick Guldstrand there and said: "Hey Goldie, you leaned how to manhandle a solid axle Corvette, and I learned how to deal with the tricky "rubber axle" on the Sting Ray. We don't need no stinkin' computer second guessing us, do we."
Dick's eyes got real big and he replied: "Oh yes you do"! The first trip around the course convinced me that Dick was right. I knew I was making little mistakes, but the AH was correcting and allowing me to drive the car much faster than I would have originally though possible, and I have 40 years of racing and hot lapping experience. With AH you can drive more aggrssively with less risk of going over the edge, which is a real benefit in a car you're not intimately familiar with or when road conditions contain unexpected surprises - like a loss of grip due to ice, water, oil, or debris on the road. After a couple of trips around the course with AH I became familiar and comfortable with the car and was very impressed.
The AH really works without being intrusive, and I would not recommend that it be deactivated in normal driving. If you run track events, you can experiment. Start out with AH enabled, and once you've got some familiarity with the car try competition mode and see if you can do better. GM admits that an "expert" driver can beat AH in Comp mode, but "expert" means a very seasoned competitive driver - either a pro or a very competent amateur.
