I'm only 6'1" but like slong, have long upper body and I have hit the ceiling too. I found, though, that if I adjust the seat all the way down then angled up in front with the seat back a little less than 1/2 way back, my head only touches on the left portion of headliner. The front seat bottom angled up may also make it possible for you to bring the seat forward enough so that your head is more centered at the highest spot of the ceiling away from that drop down area. Your knees may be a little more bent than you're used to but the seat angled upward in front gives you some support that way. It was trial and error for me for 2 days before I got it just right then I quickly got that puppy 'memorized'. Good luck! :)
