Road racing???
I am very familiar with the local autocross events in my area, but I was wondering what the next step in road racing was...Are there are all out road racing circuits (multiple cars racing on the same track at once, long straightaways, etc.) that a relative amateur can get started with? I really have a desire to get into this sort of thing, but know nothing about it aside from autocrossing in parking lots..I would like to use the car for what it was originally intended for, and would love to see the same wrx's that are competitive in autocross stay with me on a long straightaway out of a turn!

If you go to the autocross and roadracing forum you wil find more info than you could imagine. Including info regarding events local to your area.
It looks like a HPDE (high performance driving event) is what you are looking for. They are non competative events with multiple cars on a road course at the same time. Most have very stict rules and only allow passing with point by (from car being passed) on predetermined points on the track. These events are a blast.
If you are looking for something a bit more competative then you can try time trials. Which is like a HPDE but you have a 2 to 3 lap timed run at the end of the day for which you are basically on the track by yourself. Generally these work like autocrosses on dedicated road courses with a few practice sessions.
As mentioned, a great way to start is get your feet wet with driver's education events. I started DEs back in 99 in a 3rd Gen RX-7 and did about 15-20 of them, then bought the Z06 and did about 5 more before going full SCCA T1 racing. Normally Porsche and BMW clubs are the best bet for DE events.
Find the local PCA club in your area and browse their website for driver's education events. The links posted by Tom above are great, but don't really help much west of the Mississippi and I haven't found anything similar for out west. Here is the national pca website regional directory:
