Why would you turn off the MAF during tune? I would assume that the MAF is a component of the AF
2 ways to skin a cat here. 1 is turn off the MAF, the other is turn off the MAP (and then vice versa when done with that). You can't leave them both on, because both feed different tables/maps.

You must tune the 2 separately. You don't tune fuel by "playing with the MAF". If it's wrong, you correct it (and the VE map that's likely wrong too), and your commanded fuel becomes your logged fuel. EFILive has a feature that allows you to tune both simultaneously leaving them both on, but I doubt that's what you were referring to.
