I have a 2000 Coupe with 30K miles and seem to be burning a quart of oil every 1500 miles or so. It's not leaking and I haven't seen any blue smoke. Is this normal?
Unfortunately, yes. Many of the 00s and 01s had the problem. The cure is a ring job (only one of the rings on each cylinder is the problem). Mine was done under warranty, but many have had problems getting the dealers to fix it.
If you are out of warranty, you may want to switch to a different oil. If you are running Mobil-1, it is close to a 20W oil at temperature and has lower Noack values then some other oils. Try the German Castrol 0W-30 or Amsoil 5W-30 and see if it helps. I know it made a big difference in some of my other cars (not the Vette).
Just checked... say 97% so it looks like the dealer reset it when the added oil yesterday. It's only been a few weeks sence my last oil change. A quart of oil here and there is much cheaper than a ring job so for the time being I'm buying shares Mobile 1.

1) rings, as they said, but it would have to be a later '00 to have that issue (my '01 was awful)
2) sucking it into the intake through the PCV system. This used to be a major issue, people were making small catch-can mods etc. and it seems to have died out (maybe they made a change). Back when I had my '01 there was much talk about this.
you could see if you have oil in the intake (you'll have to pull the bridge form the throttlebody and check through the TB. I believe the TB is sealed to the manifold so don't remove that unless you plan to reseal.
