Car had been occasionally overheating, but nothing severe. Today, decided to replace thermostat to see if that could be the problem. Now, it overheats immediately? Never acted like this before. Obviously, it could be a more severe problem like a water pump, BUT, it never did this before with the old t-stat...just random over heating. Now it happens no matter what. What could it be now? Did I refill the coolant wrong?
Check to see if you have circulation.... (possible bad pump) Once the cap is back on, check to see if you have pressurization... (stiff hoses) then check to see if you have debris in front of your radiator.. A big garbage bag will do the trick.. and put you in the situation you are in now...
did you do the drain and fill correctly?? if not like stated above air may be your problem...also when is the last time you really cleaned the fins on the radiator and ac?? need to pull the shroud off to really clean them good

did you burp the coolant system?
do the cooling fans come on?
do you have heat?did you have heat prior to changing the stat?
do you have white/gray smoke out the tail pipes?
have you been topping up the coolant often lately?
Here's my understanding of what you said was going on:
A) Prior to t-stat change, occasional overheating.
B) After T-stat change, immediate overheating.
Based on the above, I'd say you didn't get the air out of the system.
As for the occasional overheating, take a look at the other suggestions relating to debris, etc.
Okay, got air out of system. Doesnt overheat as fast. Unfortuntely, it still overheats once you put a load on it. By replacing with a new thermostat, we've made the previous problem worse. Fans come on properly.

My only thought now is water pump. But, weird that the new t-stat has magnified the problem.

are both radiator hoses hot to the touch?

Cooling fans come on. Low speed and then high speed.
Yes getting heat.
Yes hoses are hot.
Car at highway speed or any load will overheat. Moving air does not help.
Anyway to bleed air out besides squeezing hoses and working with the coolant tank cap on and off?
does the coolant jug gurggle?
right now it's one of two things.either the impeller on the water pump is missing blades or not spinning fast enough[no circulation]or you have a combustion leak into the coolant system[that's providing you have all the air out of it].if you have a combustion leak,you should see the coolant in the jug bubbling like hell and pushing it out of the jug.if you have a circulation problem,the coolant in the jug will look like a calm lake.
when you turn the car off do you hear a knocking sound coming from the coolant sytem[knock sound from radiator,overflow jug,etc]?
Yeah its pushing it... we just took off the radiator shroud and went right into the main hose...big ol air gap...poored coolant mix right into there until it came out the radiator...then put the hose back on...kind of a pain...but it looks like that was it. Following the proper air bleeding procedure wasnt good enough for the killer air bubble we had I guess...
