What temperature should my 99 c-5 be running at with the stock thermostat?

my 98 runs around 200-210.

The stock thermostat is set to open at 194*.
My car (2000 MN6) runs at 194 on the open road and around 200-220 around town.

Depends on a number of variables; i.e., outside temperature, A/C on or off, how/where you've been driving the car, etc. etc. Check this thread:

02 C5 Overheating in 90 degree heat???
