I have never heard that these cars log any data like that. I'm pretty sure they don't. But I know that most large trucks engines like Volvo, Cat, and Cummins do keep track of a LOT of that type data and they will refuse warranty work if you have abused the engine.
The computer in our Vettes records and stores something like 10-15 seconds of operational data. RPM, Speed, ABS actuation, AH actuation, and several other bits of data are in the memory. This data is the last few seconds prior to shutdown or air bag deployment. It has been retireved in accident cases and used against the driver a couple of times here in Virginia. If the data shows 100 mph and ABS actuation in the 15 seconds prior to a crash, the driver is in deep do-do. As far as remembering what you did yesterday or last week - not yet anyway.
Like he said. The PCM is an engine managment instrument and records only performance functions and long term fuel trims. The black box under your seat records the last few seconds of speed, brakes, etc not engine misuse.

It is actually located in the center console under the radio and is part of the air bag system. It stores very little information, just a few bytes the best I remember. It basically is the state the car was in when the air bags deploy. So being part of the air bag system it can't be disabled and still use the air bags.
