Never seen a low TEMP warning, sure it isn't a LOW LEVEL warning?
In general it is good to get oil up above 21x in order to keep out moisture. With my oil cooler I run cool on the street but get it plenty hot on occasion on the track.

i have the same problem on my '02 coupe. someone told me it was the oil temp sensor located in the oil pan...they said it's either dirty or just have gone bad...

Using the 'gages' button, cycle through the display until you come up with the oil temp display. I have never heard of a low oil temp warning before so it's either a bad sensor or a mistakenly read low level warning as others have said.
I've seen the "low" oil temp reading many times. If it's that cold, it's normal.
But since you're posting this now, i can't imagine where in the world you are (other then Antarctica) that this might be a legit reading. Probably a sensor issue.

Same here. In cold climates, the oil temp will sometimes read LOW instead of a value and remain that way until the next time the car is started (assuming the oil temp is above the minimum temp).
Since you're not in that cold of a climate, the sensor is probably bad, but check the temp sensor connector. If the connector is either open or short circuited, it would likely give and extreme hot or cold (i.e. LOW) value - corrosion may also have an effect. Otherwise you'll need to replace the sensor.
