I don't know what the book says, but I just had one done 3:15 to 3:42 swap on an A4 and it took about 3 1/2 hours. It was done by a performance shop.
The dealer wanted over $900 for the job. The performance shop charged me $260.00.
They let me hang around and watch - it should not be more than a 4 hour project.

A "friend" of who has a shop told me the books call for 9 hours for the diff. R&R. He said he would charge me $700 for the swap. He's a top notch mechanic and actually wears surgical gloves when he works on cars. Actually $700 seemed quite high so I contacted a local performance shop, who supposedly had done this type of swap many times. They gave me a quote of $300 which seemed more reasonable compared to what was involved. I never did the swap because I ended up selling the car shortly thereafter.
