I was hitting 250 after 10-15 minutes of driving all last week. Took it to Chevy and spent 1200 replacing fans, fuses, radiator, water pump..etc. Now sticking around 215-225....is this about average? After that much cash (at employee cost) it better be running average. But what is average? Please help!!!

225-230 is about right in traffic. At that temp fans will come on and temp should drop pretty rapidly. Then fans will go off and temp will shoot up again. This is the cycle in traffic driving. You should be at about 190 or so at highway speeds.
The fans run all the time with the AC on so you don't get that spike in temp when sitting idle in traffic.
Mine runs about 192 on the highway and up to 235 in traffic. It really bugs me when it gets that high so often I have the top off, windows down and the air on !
I purchased one of those fan controller units from Mid America. I never installed it, it has this type of probe that needs to be inserted between the radiator fins to monitor the temp. I did'nt like that type of application so I never used it. I t sits in the garage in the box it came in!
That seems about right for a stock setup as this is what I usually saw in San Antonio. I went FI with a Dewitts and now when I get stuck in traffice I have only seen 215 in the 100+ degree days we see here and this is nothing to worry about as the stocker was made to run hot for emission reasons

When you say 250, are you talking about oil or coolant temperature?
In 90 degree weather, my car's engine oil can easily get up to 230 if I'm having fun with it (read keeping revs above 3,000 and stabbing it towards redline as the highway clears) My coolant temperature will run between 190 and 200 when running highway speeds. If I stop, or get stuck in heavy traffic, my coolant temps will rise to 225 then drop quickly once I get moving again.

Your temps sound fine, if you live in a hot weather area. When I see those temps in mine it is usually in summer while driving in town. As soon as I get to the freeway or open road it drops to 190 quickly. I've seen the same temp behavior on my '99 coupe (sold) and now my '04 Z06. I had a stock thermostat in both.
I'm sure you have checked fluid levels and insured there are no leaks in your cooling system? It could be as easy as replacing the radiator reservoir cap too. Maybe replace the thermostat?
I do my own coolant changes and like that I know what is going in my radiator. Hope this helps. I know when something with my car isn't right...I don't feel right. Good Luck.
Why does everyone ***** over the fact that the C5 runs cooler with the A/C on? Mine sure does. Turning on the A/C actually changes when the fans come on...essentially keeping the temperature lower than with the A/C off. It does rob power though, but....
driving up hills passing trucks in arizona during the summer... 193 with AC on. however i had removed the plastic rock sheild under the car all 3 pieces and had problems with high temp even on flat ground, apperantly the shield ducts air up to the radiator also... i put it back on and temps back to 193 steady. with the ac on there is an extra fan that turns on which keeps the water cooler.
