Take a look at the Tire Rack and the specs for the tire you want to get. The 325 might be big for 11.5 inch wide rim, PS2's in that size look for a 12 inch rim, it would be close. You are ok with the 315 on your rim width but I would go with the 305. The reason is a 305 will not stick out as much as a 315 from the top of the wheel opening. Do a searck on the tire width and you can see what some wider tires look like without a mini tub to tuck them in. A 305 will stick out slightly depending on the tire brand a 315 will stick out a bit mote than a quarter inch I believe.
Hopefully a few more will check in,

A 25 sidewall? Man you may as well just paint the rubber on the rims with a brush. That thing is gonna ride like a truck and little grains of sand are gonna scrape your rims. It gonna look goood tho! Post the pics when its done.

I found a 315/35/20 at tire rack...relatively cheap...but is the sidewall to tall and will i have rub issues? And what would i pair with that tire for the front if its a good fit?

This tire size calc. should help out also
http://www.1010tires.com/TireSizeCalculator.asp

That tire size that you are looking at is about 2+ inches taller than a stock Z06 tire, not sure that will work. Now, if you could get that tire size in there ok you would be looking at a 265 or 275/40-19 front to keep a one inch difference front to rear. So I can't say if it will work or not but if it were me I would go with a combo that stays closer to stock over all height, JMHO.
