Does anyone know when GM switched to the 5wire MAF/IAT thingy? I think it was 2004, but I'm not sure.

This is true, and, in addition, the IAT sensor was moved to the MAF in 2001. As a side note, LS1 Camaro or LS1 Firebird, MAFs will work in a Corvette, again size (generation) dependent.
