Yeah, I'm closing on a house down there at the end of the month. No more smog checks!!!, but I'll still keep the cats. Next time I get it tuned, I won't bother asking for an "emission friendly" tune. You might find something at Extreme Motorsports in Bartlett. I've heard some LS1 guys having good service there, so they may be able to get you some cats at a decent price.
I upgraded to some Random Tech High Flow cats and deleted the pre-cats. As discussed earlier, my CEL came on. I took it up and had it turned off, but the tech said it will come back on after I turn the car off and on a few times. Furthermore, he told me that I would have to delete it out by a tuner. I do not have the smell though, and I could feel seat of the pants difference which is not normal for me. It also made it louder, which I also liked. It was a good upgrade in my opinion but the cats ran me about 5 bills vs the mid pipes which are cheaper. So I guess either way, you will not be legal.

High flow cats make the same HP as no cats in most cases. The decision comes solely down to sound (and environmentally, if you care about that.)
Note, per AVB's post above, they do make a difference on turbo cars. I know most of the guys reading/writing in this thread are not turbocharged but it is worth noting nonetheless.
Personally, I do not like the smell/sound and am going back to Random Tech high flows. I'll just turn the boost up a pound or two to regain whatever the cats are costing me.
