my car(2001 coupe) runs at around 172 this time of year, no heater running. Could the previous owner have installed a 160 thermostat without reprogramming for it and that is why it runs so cool?
If the heater is on, it is slightly higher like 179. I think that's because the compressor is on also with the heater.
Doesn't make sense. I got a code, I looked it up, and it was the engine was not warming up for the time run in relation to the outside air temp.

I would say that you are on the right track. It's either a 160/180 thermo or the stock one is not closing fully. The good news is that thermos are cheap.
If you’re getting a code, probably a P0128, I’d bet on the thermostat not quite closing all the way. A lot of guys install a lower temp therm, including myself, and never get a code. Like stated above a 195 deg. therm is inexpensive and if you’re a do-it-yourself guy a very easy job. A lower temp therm will cost a little more.
