Normal operating temp for a 2000

I live in hot central California. Normal coolant temp is 189-193, and the car has the stock 'stat.
When A&A tuned it, they lowered the fan on functions to 210, which it does hit in the summer, after a long run. I also had A&A install a larger radiator and B&M flat plate cooler for the trans, which lowered the trans temp about 25-30 degrees.
So.....in freeway driving on a hot day, coolant is about 192/3, engine about 200, and trans about 160/65.
It seems to be working for me!
