I've got the 4.10s/MN6 and a lightly modded car(intake, exhaust, tune, etc.) and I haven't had an opportunity to test true top end. If I had to guess what a car like mine would do I'd have to say 155-160. When or if I get a chance I'll have to pull top end in 6th instead of 5th like before because 5th runs out.
In stock form the 5th overall ratio is 3.42 x .74 = 2.53
With 4.10s 6th overall is 4.10 x .50 = 2.05
So as you can see the ratio is going to be quite a bit lower and I'm afraid the car will poop out earlier. Of course if I had more power I would be able to pull more.
That's the best I can do for you. Maybe someone will be able to give you some concrete numbers.

I don't miss the 3.42's at all... Initially i topped out at 150-160 @ 6000 RPM, but after my cam swap, and bumping the Redline to 6600 5th Gear tops out in the mid 170s... which is faster than i'll ever need...
Most of my "Spirited" driving cuts out below 140 anyways... and with the 4.10s your 60-130 time is going to be lighting quick... (assuming 6600 rpm redline...)
You can see that with just a Redline Bump the 4.10s gets almost back to stock shift points, except you have a much better mechanical advantage in each gear!
W/o the redline bump, your 60-120 time is still quicker with the 4.10s than it was with the 3.42's you just run out of steam sooner because you run out of gear...
IMO - with the M6 Transmissions, a 4.10 rear and 6600 RPM redline is perfect.... Do the 4.10s and don't look back, you'll love it!
Go with the 4.10's, you won't regret them. Last time I made a pull with the 4.10's (H/C/LS6 intake) I hit 160 and it was still pulling. 0-60 runs are insane, at this point I feel like the car just wouldn't be as fun with anything less. In a ZO6 thought (MN12) it might be a tad too much gear.
