sounds like you might have a air bubble in your cooling system somewhere. when your driving the water circulates and get the bubble away from your sensor but when the water isn't moving fast enough by the engine turning the water faster like when you are driving the bubble stays closer to the sensor and the air is basically steam which is a lot hotter than the water. You can try some of the methods mentioned in the tech forum and I will post some up here in just a few if someone else doesn't jump in before i get to it. I would try that before changing t-stats or anything else.

Check up in front of the radiator and a/c condenser for debris and/or road kill blocking the air flow...

The first thing I would check is your coolant level. I had a very similar problem once, and it turned out my coolant fill cap was loose and my coolant was boiling off. Added a gallon and a half of demineralized water and everything went back to normal. It's also possible your thermostat is sticking and then unseating when you drive down the road.

It could be the coolant sensor going bad. I had a gmc pickup that did this also and it was the gauge itself.
