I've got a Yank 3200 that I plan to install in the next couple of weeks and I really like my cruising rpm's on the highway so I was kinda wanting to keep the 2.73's. Has anybody ran an aftermarket convertor w/ the factory 2.73's?

I wouldn't go very high in stall speed with 2.73's; nothing above 2400; but that's just personal opinion.
Converters and rear gears are somewhat matched-up with each other. This matters more with highway rear gears... than with steeper performance gears.
What happens is that there's too steep an rpm drop when the converter locks... it can make the car shudder a little bit; depending on what RPM the engine drops to right after lockup. I don't think any harm is done though... it's just a little unusual in how it behaves.
You could get the lockup RPM/MPH raised a bit via a program change.
