1) What kind of mileage can I expect from stock clutch?
Uhmm....That would depend on how hard you drive your car. As for me, I enjoy the hell out of my car so I would be glad to make it to 35K miles.
When my clutch goes out, I probably go with a Cartek clutch. I've heard lots of positive things about their clutch (but also a few horror stories about their customer service skill as well). Again, I do not have any first hand experience with them. I'm just telling you what I have read on the forum over the past few months.
The revised GM hydraulics take care of the problems that everyone was experiencing. You are good to go with any clutch that you are comfortable with. Wear is based a lot on driving style and abuse.
I really like the STAR clutches. I have sold them to a number of C5 guys on this board. They are all VERY happy with them! :yesnod:

As already stated, it depends how you treat it. Mine was still in great shape after 20k hard miles but I had it replaced when my trans. was out of the car.
2) Any recommendations on a replacement?
It depends on what you wanna do with the car, how much power it has etc.. For most people the stock '02 unit is perfect. I've got a '01 assembly and it works great...holds everything I throw at it...including the 533 rwfooties on the spray.
3) Anyone have experience DIY? And if so is it easy or PITA?
MAttG has taken his out on jack stands and said he would'nt do it again without a lift if I remember. Tha's certainly my opinion. The torque tube, trans and diff. all have to come out among other things. Where ya at Matt?
