what you nee to do is jack the car up with one jack and find another crappy little jack out of one of your other cars use that jack to jack up the side of the leafspring you are working on. this takes he pressure off of it and makes it easier to loosen. also add some penatrating oil!
It's not difficult to remove the spring. I would remove it, put it in a vice, spray the bolt with penetrating fluid, and use a wrench (I have seen a smaller pipe wrench used for the way it leverages pressure) on the lower part of the bolt. You should be ablle to make it work.

I had a stubborn bolt on mine, I sprayed it with some Kroil let soak over night and it did free up.
