Going to be home this weekend and was going to replace the upper and lower hoses and change out coolant.

Replacing hoses, will lower hose removal drain it enough.
How much 50/50 dexcool will I need to top it off after replacing hoses and draining fluid?

No. That will only drain a portion of the fluid. Just follow the procedure in your service manual..you can't lose.

I would also recommend taking a good hard look at your heater hoses too, Jim. Hot water circulates through them all the time as the C5 does not have a water flow shut-off valve in the system.

Can do. I remember on my last one that the hoses looked good from the outside, but were shot on the inside so those might need replacement too. Might as well do all of them when I am in there.

A tip on the heater hoses: The heater outlet (smaller of the two) hose is listed as GM part #12368235 and is the only one that does not have some sort of "pre-molded" section to it. It is basically just a straight piece of hose and is approx 20" (+/-) long is a "cut-to-length" deal.
Problem is, when you go to order this number you find out that that number is for the WHOLE 50' ROLL and unless a dealer (or other source) has a roll that's already been cut, they want to sell you the whole roll.
Since it looked (by eyeball) like a 5/8" hose, I thought I would just buy some at the auto parts store and use IT. No go. Turns out the hose is just enough smaller than a common 5/8" ID hose and wouldn't work. Turns out it's a 18 or 19mm ID (IIRC). I just had to call around to some dealers to find one that already had a roll that had been cut (by their techs in the shop) and they sold me some and I cut it to length.
All the other (pre-molded) heater related hoses were no problem and you just order then by their GM part number.
