Had this issue on my '00 Coupe....now my buddy has it on his '03 ZO6...Coolant will be at normal operating temp (190-194 on highway)...then when stopped for a few minutes temp will rise 200-225 range (normal)....but when taking off again fairly quickly....temp will drop down as low as 185....& remain there for a few minutes til getting back up into the 190's. What gives??
thermostat is not controling the low temp . the thermostat can not control the high temp but is there to control the low temp. when heat transfer is high, the stat will close to keep it in the stat range... its also possible there is a low temp stat in the car.
Mine is the same way after I put a 160 in it still heats up to 225 or so but on the highways in this weather I get 178 or so. AT what temp does the car come out of open loop?
At this time of year with the stock thermostat, if I am driving normally at speed it will run around 192. However, if I am off the gas down a long hill or something it will drop to 189 for a few minutes. Not sure if that is what you are describing.

Perfectly normal. I'm on my second C5 and they both did this. The fan is probably still turning to cool it from sitting in traffic. When you add the additional cooling from driving along it cools off fast and then finds it's own level of around 192 at cruise with the fan off.
