can enyone tell me what the side effects of me just taking my cat back off and leaving it open after the x pipe? And emissions don't really bother me.

No effect on emissions as long as you leave the cats in. There may be some exhaust fume incursion in the passenger cabin and some "noise pollution". Your dl could be in danger of incurring some faulty equipment points from The Man due to improper exhaust fume routing and noise level as well.
I run a set of electric cutouts which allows me to run in that mode when the mood strikes but keeps things mellow otherwise.
