Unless your PCM has been reprogrammed with new fan temps, the fans won't come on until 226 deg. They then come on low speed until 235 deg, where they switch to high. However, if you turn on your AC, the fans will run anytime the coolant temp is 165 or higher and speed is below 35mph or so.
Sounds like you have a 160 deg thermostat , but no fan reprogramming. Your system is working normally. All the thermostat will do is control the min temperature of your cooling system once it has reached opening temperature. It will do nothing more if the load on your system is enough to make the temps go above min operating temperature, as it is already wide open. In stop and go traffic, your temps will usually go up to at least the min fan temperature. (226 stock.)
Yeah that is what I thought but I turned the ac on and the fan didnt come on unless you cant hear it when the hood is open maybe im missing something. Then when I had the hood open you could hear a boiling sound coming from the overfill.
Check the fuses then check the ground pack at the right forward frame rail on top adjacent to the hood riser. The fan(s) grounds go through that. If its lose, they won't work. Also check the fan(s) electrical plugs themselves. If either of the two of them are off, neither will work in low speed mode.
At low speed it's nearly impossible to hear the fan noise over the engine noise. Not recommended since you could hurt your hand but I sometimes stick my hand down there behind the fan when I have the AC on to see if the air is moving and sure enough there is a light breeze.
My fan doesn’t come on until around 225-230. If you turn the heat on, brining outside air in, it will cool the temp. down by brining the hot air out of the engine compartment.

Unless you had the fans programmed to come on at a lower temp than stock it doesn't sound like anything is wrong. This isn't a 1960s car and is designed to run at the temps you saw.
I agree - 225 at idle is noooooo problem - when the low speed fan kicks in at 226, you should see the needle drop back down till it cuts off at around 216.
On super hot days in Tampa, sitting it traffic not moving without AC on, sometimes even the low speed fan is not enough, temp will go to 235 or so, then the high speed fans kicks in and will draw the temp down easily.
