Default Plastic parts clear coating question (long!)

So I am having some trouble with some parts I have painted. I painted a bunch of parts over the winter and they all came out great. Now I am trying to paint some more pieces and having a horrible time getting them clear coated. I am using SEM high gloss clear over SEM Flame Red paint. My issue is a very milky, hazed look. When I painted over the winter, I just put on a couple thin coats of clear and let it dry, then hit it with a serious thick coat. That last coat would self level, and look a mile deep. The next day it was dry and I was done. Now that it is warm and more humid here in Kansas City this will not work. If I try to put on the nice heavy coat it gets milky. If I use a bunch of thin coats it is not nearly as smooth and looks like it has overspray on it. How can I get the parts I am dong now to match the ones I already did? Today it was 73 degrees and 55% humidity in my basement. SEM says I should not have trouble under those conditions and I am putting it on too thick. But this did not happen one time to me over the winter when it was 25 degrees outside with 20% humidity. Ont those days it was very dry in my house cause we do not have a whole house humidifier. I think it is the humidity. So do I have to just wait til November to make these parts match the others. If that is the case I wont be going to any more car shows, I can tell you that. If I do what some say and polish it do you think I could get it done by hand. I have Zaino ZPC, AIO, Z-5 and Z-2. Would that get out the dull look after wet sanding the clear and make it look deep? Or do I need to get a Powerball and 3M or Meguires rubbing compound and then use the Z-2 over that?

Why not use a dehumidifier and get the air in the basement below 50 % and see if that makes a difference.
