Need help with engine seals/gaskets

I'm doing a heads/cam swap soon, I was wondering what the best brand/material there is available for gaskets and seals. Napa online has a few options, but they don't go into any detail (see below). Also, will I have to change the oil pan gasket?

- PermaDry Molded Rubber Gasket
- Viton
- PTFE Rubber

GMpartshouse has two options for the front cover gasket, that very greatly in price. Will either of these work for a '99?

- Front cover gasket, corvette - 5.7l - 97-04 $19.27
- Front cover gasket, corvette - 5.7l - 97-02 $7.24
