Default rear o2 sensor question

i am planning on running open header's at my next track day event. If i remove the rear o2 sensors from the exhaust but leave them plugged in and zip tied up will i still throw a code?

Yes.

Just disconnect them - you'll have a code for the duration of the event, then when you put them back in, after several drive cycles the light will go out, no long-term harm done.
