Best gasket to use
I am ready to install LG headers on my 2003. What are the best header gaskets to use? GM OEM or is there somethig better?

I just installed my headers last week (LGM as well, on a 2003 Z) and I used the F-body gaskets, GM part no. 12558573. I've read in numerous places that they are better than the stock gaskets because the exhaust ports are fully round rather than oval-shaped. I'm guessing it helps the exhaust flow better. If I recall, I think that was even the recommendation from LGM when I ordered my headers.
I bought them for $10 each from Fichtner Chevrolet (forum vendor). Be careful though, you'd think something like gaskets come priced per pair but these don't! I almost ended up with only one gasket.
btw... in case you don't have a good set of instructions for the header install... I found these very useful.

edit: Here's a pic of the F-body gaskets vs. the stockers (from Cajundude's instructions above)

I used GM p/n 12553617 which are also metal gaskets with round ports and look identical to ones pictured above...not sure what the difference is?

As said above just pick up a set of gm ls1 fbody gaskets. Those are better than the aftermarket gaskets.

When I installed my ARH, i used the gaskets they sent as part of the kit.
They looked just like the Fbody pictured.

I've used those same f-body gaskets on my Camaro and my Vette, they are flawless.
