Moisture in catch can???
It's working and telling you to change your habits. You need to drive the car for longer distances than you apparently are currently doing. Get the oil temperatures up high enough to burn off the condensation. Short stop and go trips do more harm than good. Idling during months of hibernation is not beneficial, either. If you pull your oil fill cap, chances are you'll see a brown sludge forming under the cap as well.
Do you by any chance have a lower than oem thermostat installed?
You also need to change your oil more frequently when you find condensation in it. That won't lubricate bearings/rings etc.

If you don't see any water in your catch can during cold Winter months, chances are that your catch can is mounted too close to your engine or it's just not doing a good job of trapping moisture.

No sludge. I have some water drolets <10 and a 160* t-stat that typically runs 175*.
If you don't drive the car during the winter, just keep the battery charged (float maintenance charger) and don't even bother starting it and allowing it to idle only.
Wait for those days when you can actually take it out for a good thirty minute plus drive where the oil temperature will burn off the condensation.
