You will have to bleed the brakes after install.

And you don't have to drain the system to connect up the SS lines. I hooked up the caliper side to the new calipers and then quickly disconnected the old rubber line from the hard line and then connected the new SS line. I left the outer bleeders open until I saw some fluid. After I did the other three like this I topped off the reservoir and proceeded to flush all the old fluid out, then bleed them with a helper.

They do not come with race pads so do keep that in mind, however I can sub. those out if that is what you are looking for.
The stainless lines will reduce the amount of swelling of the line itself, and it is also a tad smaller inside so that you have a stiffer pedal and more response between when your foot hits the pedal and when the brakes apply.
Of course you will get a complete set of StopTech high quality one piece rotors to replace your OEM units. These come slotted but for a few dollars more you can do drilled as well (drilled not suggested for track use).
Of course to top it off you will have three bottles of Motul fluid to completely flush the system and Hawk Brake pads in the HPS compound to complete.
To answer your question, no you do not have to do the clutch fluid but you can use the Motul fluid in the clutch system if you would like to flush it as well. Two bottles should do the entire car and the last can be used for the clutch and fresh bleeds from time to time.
Let me know if you have any questions. Always glad to help.
