Me and buddy where talking todya and he brought up something that ive never thought about before, is there not a way to just change the actual gear like say in old chevelle or something like that. Why is it that every where i look its only the whole pumpkin and whole differential? Whats involved in just changing the actual gear?

Yes; however most don't have the correct tools or expertise....so replacing the differential is easier. Some vendors have a dyno they can run the differential on, so when you get it, it's ready to go.....and no surprises of noise..whine..etc.
Is there anything else that needs to be replaced other than just the gear? And would it not be harder to setup the rear end in these cars compared to like a ford 9inch?

you have to change both gears (ring and pinion). the problem is setting them up, you can't just pull one and replace it. Gear lash, end play on the pinion and how it centers on the ring. Setting these up is a process not necessarly for the beginner. If you set them up wrong the don't last very long.
Yes, back in the day we did change the ring and pinion, but we also did the full set-up that goes along with it.
lol see the whole reason this came up is one of my freinds brothers one of those know everything car guys, although his doesnt run, nor hasnt it ever out ran my times at the track but thats another story, haha. He kept swearing and swearing there was no difference. I never said there was, just that they are sold on all the websites a whole pumpkin rear diff as a unit.
It is a whole lot cheaper to do just the gear though lol.

It's because these rear ends are not really set up to drag race. Some guys get 50-100 passes out of them slipping the clutch, and some of us get only about 20 passes. You are better off just upgrading the whole rear end in one shot than replacing just the ring in pinion if you drag race. It is much nicer to have a built rear end with upgraded parts than having a simple gear swap with stock parts.
