Not everyone that buys a vette sets aside a large budget for mods- thus the many "free mods" postings all over this site. Raising three kids and paying a mortgage puts me in the same position as the OP, plenty of money to take care of all of my responsibilities, but can't spend thousands of dollars turning my car into the wild street machine I wish it was. Jewjenk, I bet at some point in your life, you couldn't buy whatever you wanted when you wanted. Instead of alienating a fellow vette lover, maybe some constructive advice would be wiser...
OP, gutting the cats won't fix your sound problem, the muffler bypass mod will.

Then your budget should dictate what you do. If you don't have a surplus of cash, then you should not be tearing the car apart....unless it's broke. On a tight budget? ....leave it alone....drive the car.....and enjoy

I AGREE 100%! My 98 MN6 Coupe stayed STOCK other than a K&N Air Filter because I had other budgetary obligations. It wasn't that I didn't want it modded. I just couldn't waste the cash on go fast stuff and do all the right things that my family needed.
When I sold my 98 and got my 02 ZO6, there was cash saved to play the MOD game and I played hard!
Enjoy the car the way it is for now. Learn to drive it correctly and save cash for a set plan for future worthwhile modifications.
Rather than gutting the cats I would just cut them off and weld two pipes in between them where the cats used to be. This way if needed you can put the cats back on. Don't destroy them. Also with no cats you will get a check engine light so you will need to get the rear O2s tuned out.
