You need to find someone with the proper tool (GM Tech II or similar) and software to change the computer program on the car. You can raise the RPM limit before shutoff.
In addition to a speed cutoff, there is an RPM (rev) limiter. The base Corvette has the rev limiter set to 6200 RPM's. You can set the speed limit at the max, but you will still be shut off at any speed in which you hit 6200 RPM's unless that is changed also.
Nope. GM Tech II CANNOT reset the fuel shutoff value. It can completely reflash the PCM with a load that has the fuel shutoff speed set to a high number. But it CANNOT change that one individual setting.
Correct answer is as stated by 87SAM. HP Tuners or EFI Live tuning software are the ONLY two softwares that can set that individual setting. Maximum setting is 255.
My tech has a good shop and has a great deal of experience with Corvettes. I have a 1998 C5 automatic and he has installed the LMC5 and I still get the "Pull Key" message. My car has had the recall performed that will not allow the steering column to lock. What does my tech need to adjust the speed of the fuel cutoff to 255? Who can he call and what's their phone number for assistance in how to perform the adjustment?
Thanks.

No offense, but if he has a great deal of experience with vettes then he should already know the answer to your question. if he doesn't I would start looking for another experience vette tech that knows fuel injected cars are controlled by a PCM that needs a tune to change variables.
Google it.
