If you have the option then do the 243's. More compression and they don't have the airflow issue that the 241's have at higher valve lift. But if you do choose 241's just have a shop blend the short-side radius if not anything else. I think Patriot sells a reasonable priced set of heads or if you have the bones for it go with AFR heads
Right or wrong, here's where I got some of the info.
"The major change in the LS6 intake port was alteration of its "short turn" or "short side" radius, the area of the port just upstream of the valve where the port floor curves down to the valve seat. The LS1 port suffered an air flow stall at high valve lift, induced by the short-turn radius and the goal was to eliminate that."
If you are doing a valve lift over .570 get the light wt valves and appropriate beehive springs. Double springs are overkill and can hurt more then help
