Purchased a set of NGK iridium plugs and I am finding conflicting information about the proper gap. Is there a definitive gap for a 2000 6-speed? Thanks!

Don't believe you are supposed to gap the Iridiums. Preset from the factory, and they should be for the price!
The platinum were 0.060" but GM released a bulletin to change to 0.040" with the iridums. You can find iridiums specified for the car pre-gapped at 0.060" but they have been done wrong and whoever picked the gap missed the GM update.
With the NGK plugs, the second digit is the gap. If you want a narrower gap, you need to look for TR5 IX, if they make it. The first digit is heat range, the second is the gap. NGK has/had a very good catalog available for download that explained their plugs, part numbers, etc.
