I just had a quick question before starting this on '03Z. When replacing the drain and fill plugs on both, do guys put any anti-seize or sealant on the plugs, or just thread them in dry?

Personally, I always like to use some sealant on the threads as a preventive measure. It doesn't hurt. But technically, no sealant or anti-seize is necessary for those drain plugs.
I used the Amsoil last fall when I changed my diff and it did not require any additives. Before then, I hadn't changed my tranny or diff in over 4 yrs, and that included over 40 track days, and they both looked as fresh as when I put it in.
the oil should say if it has the additive for the LSD on the bottle. redline, which is my go-to performance oil has a 75-90 with the lsd additive and without the lsd additive. the redline part number is 57904 should you chose to use it. this particular oil works very well with the factory LSD
The above fluid is what AMSOIL recommends and I use at the track (and have been since 04). It does come with friction modifier already in it and extra is not needed to prevent diff chatter. I use this in several other GM vehicles and don't use additive in any. Though some like Toque opt to add extra - not needed for the C5.
Note: that is not true for the C6. The C6 diff really requires more additive than the C5 diff and for C6 owner's I will recommend at least a few ounces of the AMSOIL Slip-Lock Differential Additive (Product Code ADATB).
