Default Oil Pressure Issue

Engine runs fine as there is no knocking, stumbling or tapping and have been driving the car for over year now like this (hook it up to a mechanical guage and oil pressure was fine) and have finally decided to tackle this issue.

When the engine is off and the ignition is in the ON position, Oil Pressure on the DIC reads "0 PSI", However, When I start the engine, the oil pressure guage reads 0 and on the DIC, it says Oil Pressure XXX. I ran the Codes and P0522 pops ups.

I replaced the oil pressure sensor pigtail and it's still doing the same thing... What is going on??

Oil pressure senders are notorious in the C5, although generally when they fail they read excessively high. You say you replaced the OP pigtail - did you replace the sender as well?

P0522 is the code for low voltage from the OP sender circuit. The senders are relatively cheap ($27-$40 from Rock Auto), but hard to reach - you need to move the intake manifold forward. This can be done with simple hand tools.

I did this, and the dreaded passenger-side AIR check valve on my father-in-law's 2001 a few weekends ago. Took less than 2 hours, and we were being very slow and methodical. Had to buy 1 tool - a deep socket to fit the OP Sender. Can't recall the size, but it's big - like 25mm; take the new one with you to Sears before you start so you know you have the right one.
