I have a 2000 coupe, manual transmission with a little over 100k on it. Bought it used 6 years ago, and it has never really ran like I think a Corvette should. My 89 Mustang 5.0 had more acceleration. It feels like the throttle plate cuts to 25-30% at half pedal. Engine initially jumps, but then it's like the throttle is pulled. When I floor it, the thing just kind of runs like the exhaust is plugged or the throttle plate isn't opening all the way. Some days, it runs better than others.
I know the ECM gets a lot of inputs to adjust throttle angle on these, is there a common issue that might fix it. Or somewhere to start? Knock sensor input? I'm not getting a check engine light and as far as I know, no codes.
When was the last time you changed your plugs, wires, air filter, cleaned serviced your MAF, throttle body? Have you had your injectors cleaned/serviced.
I would start with the basics and go from there even with 100k these cars should respond nicely on WOT.
I had some hesitation with mine when first purchased at 56k. I did all of the above and with 76k it nails you to the back of the seat at WOT.

get it tuned... a tune will point to any problems and also get it out of the factory rich settings it came with. I good tune will put a big smile on your face.
