Quick question...been reading up on proper jacking and bracing the vette for jack stands. I am only lifting long enough to paint calipers. Is it ok to lift by the jacking poinnts for this small amount of time???

Where are you putting the jack stands, as far as lifting from the jacking points for any length of time is fine but for safety sake add jack stands, if you are painting calipers, why not lift the whole front end use the front frame with a load spreader (2x4) so the load is spread over both ribs of the casting and put the jack stands outboard of the jack. Same procedure for the rear.

I wouldn't go under the car without jack stands but taking the wheel off you will be fine as long as you are not extending the jack to its limit. I would chock one of the wheels too ( not the one you are working on. )
For the rear you can jack by the cross member and do both of the rears at the same time assuming your jack is rated for that amount of weight..
Yes, you can jack up one side at a time using the jacking points without a problem. I'd suggest the front point because you can lift both wheels at once.
Having the car on a jack only isn't a safety concern as long as you're not putting body parts under the car or suspension that could be fallen on. I do it all the time, to the point I installed aluminium rails on the frame so I could just jack on the rail right in the middle of the door. They also save the rockers from dragging.
