Dyno Graphs & Flat Torque Curves....Mod Options?

Guess I need to know if there's a difference between a "bored out" stock motor and an all new block 427 engine......
What got me thinking (besides dreaming about a Lingenfelter 427 TT) was how happy I was with my dyno yesterday :D

......but when I get looking at MattGs graph, the torque #s really impress me   :D

at 3500 rpms, he's got a full 100 rwtq on me  :D
don't know really what my question is, but down the road a little, I'd really like to start looking at a motor upgrade, I wanna do it right the 1st time....and I need to start the fund now :smash:
so talk to me about flat torque graphs, not just peak #s ;)....with regards to h/c, strokers, bored, etc.....
You will never get as flat torque curve with a H/C engine. I do not know about all bore engines.

[EDIT]
To avoid any misunderstandings, the graph is from a engine dyno nothing else.
