I recently added LT headers w/o cats. I was under the impression that a tune was not required, the computer would adjust to the changes. I'm experiencing some hesitation and bucking from the car shortly after start up, sometimes it even stalls but after about three minutes of doing this it clears up and seems to run fine. Btw, it idles just fine. Do i just need to get the car tuned or do i have another issue?

You may not NEED a tune, but sounds like you should invest in one. It will really bring out the power you tried to bolt on with the headers. Check out the ECS Mail order tune for only $149! Did this to my slightly modded C5 and it really brought the car to life.
You have made some major changes to the motor and the PCM cannot fully adjust to those changes without a tune. The engineers programmed an adaptive strategy into the computer and you made changes that are not covered in this strategy, that is why the tune is required. Like Doug said, the removal of the cats changed so many parameters you are experiencing such as acel, decel, idle, etc.
Post ALL your codes including the H or C or HC that follows each 5 character code. If you have any Unnnn codes then list the sensor under which the Unnnn code appears. For example 28-TCS U1016.
The same Unnnn codes can appear under multiple sensors and it is helpful to know which sensor the Unnnn code is associated with.
Did you do anything else along with the headers? CAI maybe? Did you remove the plugs when you installed the headers? It's easy to crack one if left in during install.
Definitely get the mail order tune! It'll be $150 well spent.
The only other mod i did is the zip tie mod to the air intake.
I already replaced plugs and wires.
I will do the tune first and see it that helps. I have had more than one person say i need to get it tuned.
