If I get a lower thermostat (and fans adjusted) so the engine would run cooler, would I in theory get less spark knock?

Well, it all depends how warm your car is running now.. I don't think the difference of 10 degrees or whatever the difference of the T-stat temp is will make a big difference with KR.
Do you have KR? How much? What RPM/Conditions do you get it?

I would run an AutoTap and see what you get. You may need to get it tuned to adjust for any mods you have. Since installing my heads and cam and running an open airbox, I am getting too lean a mixture resulting in detonation. I've got an LS1Edit and AutoTap on the way. I'm thinking of going with bigger injectors (probably the SVO 30lb ones) to allow more fuel, but will attempt tuning first.
