Default A couple temperature ??'s

Sorry for the long post, but I'm a bit confused. Any thoughts or advice would be appreciated.

Have owned a 99 MN6 since new, now has 220,000 miles. Coolant temp always ran below 200 degrees (around 185-195) regardless of how hard I beat on it. Oil temp would crack 200 and then drop back down after a minute of less stressful driving. Last two years temp has been creeping up to the point (220 coolant, 230 oil) I decided to finally replace the water pump (first time). Replaced the radiator as well because of how filthy it was. I put a 160 degree stat in as well to help keep temps down on such a high mileage engine. Temps are back down to where they used to be a few years ago. All is well, right??? Well, this is where I'm confused.

1: Low speed fan comes on at 180 degrees. Always has. Everyone on here has been saying it comes on well over 200. I don't have tune.

2: Tried the old "bleed the coolant from the bypass tube on the drivers side head" trick, to verify no air in system. NO coolant comes out, even when the engine is on and the stat is open. Now, when I filled the system through the overflow tank, the front of the car was elevated pretty high, Not sure if that has anything to do with it, but I would think coolant would flow with the engine on.

Are either of these things something to worry about?

Pulled the bolt all the way out. Nothing! Maybe I should replace it? Does it hurt anything if it's clogged?

If the car is level, you should EASILY get coolant to come out of the steam cross over tube. If the radiator is pressurized and you carefully crack the bolt loose, it will come out a LOT! If its HOT be careful!!!!!

If its cold, remove the coolant reservoir cap, put your palm over the opening and SQUEEZE THE UPPED RADIATOR HOSE. That added pressure should cause the coolant to come out of the loosened crossover tube bolt.
